Pane cunzato means “seasoned bread”. It began as a poor man’s dish in Sicily: a toasted loaf dressed with whatever the kitchen had. On the Aeolian Islands it became a delicacy.
We make ours with Timilia and Russello, Sicilian ancient grains milled slowly on stone, then top it with raw, fresh ingredients: buffalo mozzarella, Trapani-style tuna, Salina capers, cherry tomatoes and oregano.
